The cool climate of Tasmania is perfectly suited to the production of crisp, complex, aromatic white wines. This climate assists in lengthing the ripening period, while also preserving the delicate aromas that can often be lost in wines grown in hot climates.
We take advantage of such conditions by making seven different white wines from five different varieties. These are Sauvignon Blanc, Riesling, Chardonnay (an Estate and a Reserve), Pinot Grigio and Schönburger (a very rare German grape that we use to make both a dry table wine as well as a late picked dessert style). Our white wines feature minimal intervention in the winery; the grapes are generally whole-bunch pressed with skin contact creating balance and good structure. Chardonnay goes through malolactic fermentation (usually partial only but dependent on the vintage conditions) and lees-stirring to create texture and elegance.

This wine has a complex nose of fresh melon, rose petal, lychee and honeysuckle. The palate is luscious and persistent, with melon, guava, white stone fruit and brown pear flavours and a refreshing, clean finish.
